After Chef’s elimination of Julia, Rock pulls Jen aside. He apologizes for what he said, and Jen does the same. Jen and Bonnie are sad that Julia is gone, but they hope that culinary school will be good for her. Rock misses Julia as well because she was an “inspiration” to him. Bonnie is concerned that she’s not worthy to be here. Jen is worried about Rock.
The next morning they gather before an uncharacteristically cheerful Chef Ramsay. He introduces them to his “number one mentor.” It’s his mother. Chef warns Rock not to curse in front of his “mum.” She presents Chef’s favorite dish as a boy: macaroni and cheese. Chef explains that people want comfort food, but as culinary artists they must make comfort food unique. Chef shows off his twist on mac and cheese. His version has lobster and black truffles. For the next challenge, the candidates will improve an American classic for fine dining. “Homemade to gourmet,” Chef explains.
The three must choose from five domed plates so they don’t know which dishes they are getting. Bonnie is stuck with franks and beans, which throws her. Jen is surprised with fried chicken. “I can do something with that!” she laughs. Rock’s dome uncovers spaghetti and meatballs. They have one hour and can use anything from the Hell’s Kitchen pantry. Bonnie is hung up on what a franks and beans dish is. Rock makes fun of her.
With the time up, everyone presents their dishes to Chef and his mom. Bonnie has an Italian version of franks and beans. She made mini bruchettas with a mushroom crème leek sauce. Rock did three small servings of pasta. One is with a crème sauce, one with veal and the third with a spicy chorizo. Jen shows off her fried chicken roulade stuffed with crab meat, spinach and goat cheese.
Chef introduces three special judges that he has brought in to help him decide the winner. It’s the mothers of all three finalists. Jen and Bonnie cry when they see their moms. The tasting begins, and none of the chefs can tip off the judges about which one is theirs. The moms start with Rock’s spaghetti and are pleased. Jen fears that her own mother won’t approve of her chicken, but it is well-received. Even Bonnie’s franks and beans are liked.
The mothers whisper their decisions to Chef. There’s an outright winner, and it is Jen’s chicken. She cries again and hugs her mom. As reward, Chef invites Jen and her mother Joyce to lunch with him and his mom. Rock and Bonnie are left to clean the dorms from top to bottom. Yet Chef allows them all to spend a few minutes with their mothers. A lot of hugs go around, and the three finalists feel rejuvenated.
Jen and Joyce ride with Chef and his mum in a limo to The Lodge restaurant in Beverly Hills. Jen promises Chef that she will make sure she is loud, in control and accurate in the next dinner service. She values the one-on-one time with him. After lunch, Chef brings Jen and Joyce to a culinary shop and gives her a thousand dollars to spend. Jen goes crazy as her mom keeps tabs on the tally.
Sous Chefs Scott and MaryAnn map out the cleaning list for the losers. Bonnie announces to Rock that she’s only good at making beds. He’s surprised that a nanny is not responsible for any of these other tasks. Yet they have fun doing the housework together despite Rock thinking Bonnie is moody and bossy. She complains of being hungry and Rock laughs.
The limo brings Jen back to Hell’s Kitchen and she says goodbye to Joyce. Jen greets her friend Bonnie in the dorm. Rock feels isolated because the two girls are close. He retreats to his bedroom, confident that he can still beat Jen in the end.
The next morning, the three get ready for the most important dinner service during their tenure in Hell’s Kitchen. They are all buoyant and ready. Chef gives them a pep talk, but also lets them know that they will each be taking turns “running the pass,” which is when they take lead in sending out the orders to the waiters. “This is where it separates the difference from a cook to a leader,” he explains. “You run the kitchen, or the kitchen runs you.”
Chef pulls Bonnie aside to check on her assertiveness. He has her pretend she’s the head chef and he’s just screwed up. Bonnie role plays yelling at Chef. Rock and Jen listen from the kitchen and think Bonnie has flipped. Yet Chef is impressed and thinks Bonnie has clearly got her message across.
Rock is next, and he makes a feeble attempt without yelling. “You’ve got no idea how stupid you just sounded,” Chef laughs. Rock tries again at disciplining and Chef likes this second turn better. He summons Jen over to give it her best shot. When she weakly chastises him, Chef says, “That sounded like a drunk country and western singer.” He tries to rile her up on her second turn and she improves.
Chef opens the restaurant and calls out the first order. The three are working together beautifully, sending out perfect dishes. The sous chefs will fill in gaps in the kitchen and test the chefs when they take turns at the pass. Chef whispers to Scott and MaryAnn that they are to make certain mistakes.
Up first at the pass is Jen, and she’s assertive in calling out the orders. Sous Chef Scott delivers a spaghetti dish without crab on purpose, and Jen goes to send it out. Chef is furious that she lacks quality control. “You have to cook with your eyes!” he yells, and has her start again. Now Chef looks to see how Jen recovers. She catches risotto that has not been cooked properly. Rock thinks she is coming across jumbled, but Chef praises Jen. The kitchen managed to turn out food.
Next is Rock’s turn at the pass. He needs some help from Chef. Scott delivers a monkfish without ham wrapping, and Rock stops it before it is delivered. While Rock passes the quality control test, he is failing at getting his team to complete their orders on time. Bonnie agrees with Chef that Rock is too slow at calling out orders, but Rock claims he is trying to be efficient.
With over half the restaurant waiting to be fed, it’s Bonnie’s turn. She has problems calling out orders, and Rock can’t follow her. Bonnie does catch Scott’s poultry as not being crispy enough. “I can see why Chef gets so mad at us,” Bonnie notes after running the pass. She then stops Jen’s risotto when she tastes it’s not salty enough. Bonnie personally questions Jen’s palate. Suddenly, everything stops when Jen’s risotto is overcooked. Scott confirms this is true, and Jen re-cooks it. Bonnie finishes her turn at the pass. Chef resumes control of the kitchen, and they get the last orders out.
After the restaurant closes, Chef commends the three on the best night so far in Hell’s Kitchen. “It was good, but it wasn’t perfect,” he adds. He will judge them on the hot plate, the pass and their stations. Chef asks them to go back to the dorm and think about why they should continue.
Jen knows that she and Rock have worked hard for this, and she isn’t sure whether Bonnie’s heart is in it. Yet Bonnie’s initial worries were more based on fear, and overcoming all the obstacles in the competition has only made her stronger. Rock has always dreamed of running his own restaurant, so he wants to win.
They line up for Chef and he asks each of them why they should be a finalist. Bonnie says that she has improved and, while she’s a team player, she can definitely step it up to the next level. “I live for food,” Jen pleads. “I know I’ve been a mouse, but I’m gaining confidence.” Rock explains how he has grown as a person, and he came to Hell’s Kitchen get the restaurant prize.
Although it’s a tough decision for him, Chef chooses Jen to leave Hell’s Kitchen. Despite all the good work she’s put forward, Chef encourages Jen not to stop cooking and says that she has nothing to feel ashamed over. Chef hugs her goodbye.
Chef then brings out more special guests. Rock sees his wife, and Bonnie runs to both her parents. Both contestants weep. Chef has one more thing -- he tells Rock and Bonnie that their biggest challenge is ahead of them. Suddenly, a tarp rolls down from the ceiling, splitting the restaurant into two halves.
